Was a busy day, my husband had to go to the hospital and have an ultrasound on his legs to make sure his blood is still circulating. I pray they won't want to remove his legs...

I'm proud of myself, my husband wanted to order from our local restaurant and give me a day off from cooking. I ordered a chef salad and added grilled chicken to eat for dinner. A good change from making salads from what I purchase at the grocery store.
With the time saved from cooking lunch for the family and making the salad I was able to do some Aerobics! Yes!!! *•☆•*

Low carb good fiber salad with Avocado & Lime Juice
I'm trying my salad without dressing, this salad is large, however it has a little of each vegetable / fruit which made it quite tasty.
1/4 cup each of Romaine Lettuce, Broccoli, Cauliflower, Tomato, Cucumber.
1 cup each of Spinach and Cabbage
4 slices of Turkey Breast
1/2 Avocado
2 tablespoons of Lemon Juice
I spread the Avocado on each Turkey Slice, added Cabbage and Tomato. It was yummy, I believe I will make this again!

While finding ways to incorporate foods my taste buds do not particularly like, I decided to mix and match flavors. Avocado isn't a favorite at this time, however, I made a Chicken Salad using 1/2 a cooked skinless/boneless breast, 1/2 Hass Avocado, mashed, 1/2 celery stick, finely diced, 1 tsp scallion, minced, 1 tsp cilantro, finely chopped, 1 tsp extra virgin olive oil, 1 tbsp lemon juice, salt and pepper to taste. Mixed all together and enjoyed, the lemon and onion was sweet and tangy, which made this yummy!
