There's something intensely satisfying about using leftover ingredients in your fridge and pantry and creating something tasty and healthy. Too many times the older items in the fridge get tossed without a second thought, and given the size of the grocery budget, this is such a waste. So I've made a concerted effort to find creative uses for my leftovers.

The other day, I used a mango leftover from a dinner recipe to make a smoothie at breakfast. Pot roast routinely becomes beef enchiladas. Last night, I turned a three month old sheet of puff pastry into miniature apple pies. Today's foray into culinary recycling involved some Trader Joe's apricots. They didn't end up being a very tasty snack on their own, but I was hesitant to throw them out because they were pricey! I ended up throwing them in the freezer to keep them from rotting and this morning I tossed them with the tiny bit of raw sugar in the bottom of the bag, some leftover maple sugar from a long devoured pie, and a package of almonds from Christmas baking and made a delicious crumble. Tonight I plan on making puff pastry pot pies with all the vegetables in the refrigerator about to become mush and the white wine about to become vinegar.

And then I'll need to go grocery shopping.

As expected, the general abuse of my work week paired with a lack of gym time put me up one pound. No matter. This week will be better. I did about half an hour of gardening this morning and my flowers are really looking nice. Someday, when I have a house with a yard, I will have a garden to be reckoned with, and an exercise related calorie deficit to match.

And speaking of calorie deficits, I finally broke down and bought a Body Media Fit and it should get here Thursday so I can finally take a long, hard look at my calorie expenditure and adjust from there.

200.0 lb Lost so far: 2.0 lb.    Still to go: 55.0 lb.    Diet followed reasonably well.

I wish I had your culinary skill. For me I have a "hodge-podge" day in which I use up the fish/hamburger/chicken to add up to my protein total for my meal. Today I am going to try to eat several smaller meals so this will allow me to eat those things seperately at each meal. Great job using up the leftovers for something so yummy.

It turned out very tasty, which was no small feat considering that I used vegetarian chicken substitute. I had to become a little more creative with meals this past week because I'm in the middle of the Two Week Retreat from Meat. I've been cooking for years and the only real trick to it is tasting. As long as you taste your dish at every step of the cooking process you can't really go wrong.
