Ate some of my leftover grass-fed beef stew for lunch today. The fat that floats to the top and solidifies is of completely different texture, sort of like a super thinly sliced cheese that crumbles very easily, instead of the gelatinous goo that usually accumulates. I think I just discovered the basis of the American proclivity towards atherosclerosis.
