Ok I did finally make it to the elliptical machine today, Managed to crank ou 45 mins, according to this new challenge I signed up for. Thing is, I have so much natural muscle mass, that if I tap into that, as means of burning energy, it will be so easy for the extra weight to just fall off. The trick is, using those muscles on a consistent basis...

Made the Shrimp Scampi tonight (it has NO butter). Was pretty good, even my picky hubby didn't automatically nix it....there's hope yet!

I'm struggling w/ an ankle injury that's taking it's sweet old time to heal up. I find I'm only tolerating work outs every other day due to lingering ankle pain/stiffness.
