Good morning buddies. I have a neat idea for a meal. New to me anyway. Take a Mama Lupe's low carb tortilla and lay it flat in a skillet. Now take some Hormel fully cooked shredded beef taco meat, (I used 4 oz) and spread it over the tortilla (heat on med). Now take 1/3 cup of shredded cheese and spread it over the beef and continue heating until the tortilla is crisp and the cheese is melty. Lift the tortilla out of the skillet with a spatula and put it on a plate and garnish with Picante sauce Cut the tortilla into 8 wedges like a little mini taco pizza and enjoy. My food plan is going very good since the Holidays are over and I am excited to be back on track. I still have a few Big things in my closet that I have been reluctant to get rid of. Maybe now it is time. We start back bowling tonight and I am looking forward to it. I need the exercise.

I really like the low carb tortillas. I top them with all kinds of stuff, from pizza toppings to scrambled eggs, tuna, chicken....I like the crunch!
