I make it thru the first day! Yay! I can do this! I feel pretty good this morning. About ready to have some lunch. Last night I made a low carb Quesadilla for dinner. I used the Mission Carb Balance tortilla, some chicken and cheese and dipped it in sour cream and tomato sauce. It was good but next time I'm getting salsa to dip it in. That would be even better. I'm thinking it would be something good to make for lunches at work sometimes. A co-worker just asked me to go eat Chinese food with her. I said NO :-) So far, so good!!!
