Tabbouleh made with cherry tomatos, parsley and mint from my garden. I always add lots of chopped Persian cucumbers to mine. So yummy and refreshing!

I am such a boring eater, LoL! That looks really good! I've heard of Tabbouleh, but don't know if I've ever tried it. Is it plain rice with the other goodies you mentioned? I am so excited to learn more exciting things to make from you all😃!

TerriAnn208 It is really delicious! Not difficult to make, just requires a little prep work. The grain is Bulgar wheat (cracked, steamed and dried wheat) not rice. There are as many recipe versions as there are spelling variations. I was hoping to cut & paste a basic recipe for you here, but that's not cooperating. Sorry. The basic ingredients are: Bulgar, fresh parsley, fresh mint, tomatoes, cucumbers, lemon juice, good EVOO, S&P, and some form of onion (green or red). It is highly customizable to your tastes and preferences. Have fun with it!

I got some bulgur a while ago with tabbouleh in mind. Still have to make it.

TerriAnn208 I know that quinoa is a good substitute. My cousin always uses it as a bulgar replacement in Tabbouleh for Passover. Since it's a grass and not a grain it's okay.

Williamscpa I imagine it is reasonably high in carbs since Bulgar is a wheat product. Don't know the numbers, sorry.

Love a good tabboule, add Hummus or falafel & is a hearty meal.

@Williamscpa, a cup of cooked bulgur (cracked wheat) is 151 kcal, with 34g of carbs. A cup of penne pasta is 220 kcal with 43g of carbs. A cup of cooked quinoa is 229 kcal for 42g of carbs. It's always interesting to check the numbers.
