Today is only day 2 and I think I realized that I'm not eating enough and my body is storing food. I have only been eating about 800 calories a day. I'm uping that to 1000.
How often should I wiegh in, once a week?

The minimum amount of calories you should take in daily is 1200 or else your body will think that it is starving and will just store the glycogen as fat. I highly recommend taking in at least 1200 calories daily and you will end up seeing results. Also, 150 minutes of moderate activity a week will help with your goal as well. That averages out to be 30 minutes for 5 days, and you don't have to do all 30 minutes at once either!
