The weather strikes again! Everytime it warms up for day or 2, then gets cold again, we all get sick! Ugh! I am so tired of all the colds. So far just my son and I have it, hopefully it will stay that way. My daughter seems to have the ability to dodge all the colds and viruses we catch. Thank goodness. My sister and her daughter are still here. I did really well yesterday, ate very light all day, then for dinner I made a healthy beef stroganoff on Whole wheat egg noodles. Everyone really liked it. Even all the kiddos. I didn't exercise though. I have to do that the rest of the week. I want to get out of the 190's by monday. I am going to make dark chocolate covered strawberries for my hubby's valentines. We all 4 LOVE them, so it will be a better treat than a box of chocolates. Then I told my husband I wanted him to cook dinner for us valentine's night. We don't have a sitter so we will be home together with the kids and then maybe have a glass of wine or 2 after the kiddos go to bed. My husband has only cooked spaghetti and hamburger helper for me in the past. He can cook eggs and grilled cheese too, but that is the extent of it. Oh, except for grilling, he is great on the grill. I told him how wonderful it would be to sit down to a home cooked meal that I didn't have to cook myself! lol. So, we'll see how that turns out. He does want me to pick out a couple recipes for him, so I need to browse ideas for healthy, somewhat simple meals for him to cook. I am excited to see the results!

Here's a simple and low-fat recipe for a ground beef "stew" from a low-fat cookbook I have that even a man can handle. All you need is some extra-lean hamburg meat; shredded carrots; chopped onions or leeks [add frozen green/yellow beans or any other vegetables you want]; 2-3 potatoes chopped in small chunks for fast boiling. Boil potatotes and while they're cooking, cook meat in a separate medium-size pot; add 2-3 cups of water once meat is cooked; add no-salt spices to taste; throw in veggies except potatoes until frozen veggies have thawed out; once potatoes are cooked, add them to mixture for about 5 minutes - amend measurements to fit your family's need. Be wary of the chocolate covered strawberries and the wine; they could cause a weight gain rather than a loss if you're not active enough between now and Monday to burn it off.

I hope you have a wonderful Valentine's day, and I think it's wonderful that your husband is willing to cook for you, even though he doesn't really know how. My DF just gives me a blank look anytime I suggest that he fix anything more complicated than boiled water! (But he does change the litter boxes and clean the bathrooms, so I don't complain!) I hope you enjoy yourself, and I can't wait to see you zoom out of those 190's!

:) I made dark chocolate covered strawberries today. I've only had 1, but it was SO darn yummy. I'm just glad that I can limit myself AND I didn't just make them for me or Owen.. the whole fam will have dibs..
