Had a great weekend, cheated alittle- had some pizza and a peice of cocconut cream pie but back on track as of monday. I weighed in at my familys house this weekend and lost 3 more pounds (probally gained it back with my cheat) So far so good. I am finding it difficult to resist a fav. food on weekends :(

Weekends are hard! But don't be too hard on yourself. It's what you eat most of the time that counts. One or two slip ups aren't going to hurt (as long as it is only one or two). Saying that, i had a bad day that turned into a bad week! And have now delayed weighing myself till next week. I've been snacking on cheese and nuts tonight to try and ride out my craving for chocolate. Will i make it till bed time without the chocolate?!?!?!

Im curious to know what coconut cream pie is??? do you mind giving me the recipe My inlaws cook all the time with coconut cream but Ive never heard of it thanks and I look forward to hearing from you.

INGREDIENTS: 3/4 cup cornstarch 1 1/2 cups granulated sugar 1/2 teaspoon salt 4 cups milk, scalded 2 eggs, beaten 1 1/2 teaspoons vanilla 2 tablespoons margarine 1/2 teaspoon coconut extract 1 cup coarsely shredded fresh coconut 1 baked 10-inch pie shell 4 cups whipped cream PREPARATION: Combine cornstarch, sugar and salt; mix well. Gradually stir scalded milk into cornstarch mixture. Bring to a boil, stirring constantly, and boil for two minutes, or until thickened and shiny. Add a small amount of the hot mixture to eggs and beat until well blended. Return to pan and beat for two minutes over medium heat until slightly thickened, being careful not to let mixture curdle. Remove from heat and add vanilla and margarine, mixing until smooth. Pour through sieve to strain out lumps. Place plastic wrap directly over filling; set aside to cool. Add coconut extract and half the coconut to the cooled pie filling. Pour filling into pie shell; chill. Spread whipped cream over pie, mounding in center. Sprinkle with remaining coconut. Coconut cream pie recipe makes one 10-inch pie. Its really good, too good ;)
