I gave my wife a dehydrator for Christmas. We did apples, bananas, and a strawberry/lime fruit roll-up on Sunday. I made Jerky last night and it was great. This certainly will help balance those days when I've had too many carbs. It's much less expensive than buying Jack Links or Oberto, and much better quality than the oven technique.
