Was a very bad weekend for me. I didn't accomplish much except eat a bunch of candy. Then Hubby tells me each gram of sugar comes with 3 of water. No wonder I weigh more than I did! Thanks for that tidbit darling...you could have told me before I ate all the candy!

I got the last round of lawn mowing done on Friday after work. That was fun to be able to say is done. Then it froze over the weekend. That means the garden is done for the year. We harvested the tomatoes of any size. So I have an apple box full of tomatoes that need to get ripe. Not looking forward to having to deal with those. We picked all the butternut squash and the remaining cucumbers. All that is left out there is some sunflower heads. Lots of bird food for the winter. Garden did well this year even though it got in VERY late. Now for it to warm up enough to be able to clear out the vines and get it tilled for next spring.

Any recipes for what to do with butternut squash would be appreciated. I have 15 of them to deal with. I am thinking I will dice up some and put them in the freezer. Donate some to our church for meals that they do once a week. Then I can relax and try to start an exercise program of some sort.

I love butternut squash backed with splenda, cinnamon and butter on it. As for the candy - we all slip sometimes. it is getting back up that tends to be the ard part. You can handle it.

I remember my mom putting brown sugar and butter on hers. She cut it in half and removed seeds then put on the sugar and butter and baked it cut side up. The recipes I have found online call for baking it cut side down or peeling it and cubing it into cubes and then putting herbs and spices on it with olive oil. Hubby is not going to be happy until I make some. Maybe I will be adventurous and try some myself. I hate most veggies...but better start trying to eat some more. I have pork chops out of the freezer in the fridge defrosting. Since the Vikings play tonight he will be glued to the TV so if supper is later he should be fine. Or maybe I wait until tomorrow to make that and make some football food for tonight. Pizza or burgers with flavored chips that I won't eat.

I have baked it cut side up. I have also backed it cubed. I just put it on a pan and sprinkeld it with splenda and cinnamon and stuck butter all around it. It was yummy! almost like it was backed in Syrup. It took a long time to bake though if I remember correctly.

I cook mine cut side up to hold the butter and spice. Love butternut squash.
