I just cooked a cup of pearl barley to add to my vegetable soup. It was way too much for the pot of soup so I fixed a little bowl of it for my son, with a dab of butter and a sprinkle of salt and pepper. Yum!! It was so good. He gobbled it right up. I think I may even like it better than rice. I was really surprised. It kind of had an oatmeal type texture to me, which helped me realize how maybe it isn't so weird that my sister-in-law eats her oatmeal with butter and salt rather than sugar. I guess the same things goes with grits, some people put sugar in their grits, while in the south, grits are meant to have butter, salt and even cheese sometimes. Does anyone else use barley for anything?

Hmmmmm... interesting!! I haven't used barley yet, but I am going to try it in some of my crock recipes. :) I need to get it full of something, soon! lol

I don't know that much about barley but it goes well with mushrooms in soup. I once had one that was nothing less than fantastic. The place closed before I was able to reverse engineer the recipe. That cup of pearly barley that you cooked reminds me that I have some lying around and that it might be good to use it in that way.
