Although my FS chart says that I have lost only 3 lbs, my weight watchers weigh in states nearly 8 lbs. since my first meeting a month ago. Things are going okay. I prepaid 17 weeks of meetings and do not do the online support stuff. I have the calculater and journal and I'm comfortable with that.
I made some TOTALLY awesome buckwheat pancakes for breakfast. What I did was buy the buckwheat unprocessed from one of the produce stands I frequent, ground it into powder with my food mill, added the usual pancake ingredients (egg white, baking powder, NF milk, cinnamon and splenda...plus 5 tbl. of flour to make it bind) and I had a 3 point pancake, smothered in blueberries and sugar free syrup.
What I hadn't realized is that Buckwheat isn't a grain at all... it's an energy packed, high nutrition, high fiber vegtable that reminds me of quinoa. It's basically a seed. BUT INCREDIBLY FILLING and mimics the bulky carbo taste of wheat. Gluten free too.
