Lizzie is right, I need to study my diet more. I try to eat fruits and veggies every day, but I have been snacking on popcorn lately. I don't have anymore in my home, so won't buy any more. You could be right--I might be holding onto some water weight due to the sodium intake. I eat a lot of frozen foods because they are easy to prepare and quick. I have time limitations and need to make more time and fix meals from scratch more. I'm sure I'm getting some of my sodium intake from this. I am no longer seeing my dietician, but I'm supposed to eat at least 60 grams of protein per day which I usually do well on. I haven't paid a whole lot of attention to anything more except my protein and calories. I'm supposed to be on 1400 calories, but find that I stay hungry too much when I eat only 1400 calories, so I try to stay below 1700 most of the time.

Great, you probably stay hungry because of what you are eating, not the calories! I am single and just like you, I lived on frozen dinners, popcorn, etc... My diet looked exactly like yours :-) I was so frustruated. Sodium needs to come way down, you will feel so much better. Lean protein for each meal. I cook up a bunch of chicken breasts all at once, slice them into pieces, and freeze, then I have real food to quickly go to. I HAD to do this, I really felt like I was going to die. I wanted a fix, meds something, ended up, changing my food helped very quickly. Now I find it HARD to find food without salt. GRRRrrr. Even chicken breasts come packed in sodium water. Watch out for that. I also cook up a bunch of veggies and eat them for 3 days. My diet is boring, but it is working LOL. I don't trust myself to make it interesting HA. I would eat everything at once. Start paying attention to the percent of fat/protein and carbs you are eating in your diet calander every day. It helped me figure out how balanced or out of balance my days were going. At first, I it was really hard, I had to plan my days way ahead. Once you start making some stuff for yourself, you will realize that some of that frozen food just is so loaded with sodium and your cooking will eventually taste better. Too bad they don't make any low sodium dinners. I haven't found any yet! Pick something you like, like apples, or something "healthy" and have it on hand as your go to. I think you are probably at a plateau and now need to step it up:-) Good work though..

II'm with you - I don't like to cook much either. I try to force myself to cook on the weekends, though. Last weekend, I made a couple of spinach and feta pies and have been eating a piece cold for breakfast in the morning, which gets me off to a good start. I froze a few pieces. Some weekends, I make soups = black bean soup or mushroom soup. I don't like to cook stuff that's just for one meal. I almost never add salt to anything, but depend on spices and pepper. Eggbeater omelets are also easy. I saute a bunch of spinach in a bit of olive oil, take it out of the pan, and then just add the eggbeaters, when the omelet's ready, add the spinach (and probably about 1/4 c of fat free feta, fold it over, and it's done - and easy and delicious. I don't know if any of these things would work for you, but I'm eating better, and more healthy, and feeling better for doing this.
