Had to work today. Was tired from hanging out late at the neighbors' last night. So I layed around in bed until the last possible minute. Which left no time to pack a lunch. Decided I'd splurge and get lunch at Sheetz. Told myself I'd get their chicken caesar salad wrap. And then I started dreaming about their toasted ciabatta sandwiches, which I love and haven't had one in about a month. I totally caved and got it. Didn't get both a yogurt and an apple, just got the apple instead. Then adjusted what I had planned for dinner.

Til I got home and hubby decided he'd deep fry some homemade french fries instead of the rice I'd had planned. So readjusted once more and was able to make the numbers work out right. What a juggling act!

Anyone know any good recipies for baked homemade french fries?

Yeah! On making the numbers work out! I hope you got caught up on your sleep last night. On the french fries, I just peel and slice (or don't peel) french fry cuts (sometimes I do chunks too). Spray tin foil with canola spray. Place fries evenly on pan and spray with canola spray again. I bake them on 400 or 450 (I can't remember) until they are browned how I want them. Sprinkle them with Lawry's Seasoning Salt, or whatever seasoning you want. Voila!

How long does it usually take for the baking time? We like ours really crispy, which therein lies the problem of deep frying, means we leave them in the grease much longer...

I prefer mine crispy too. Be sure to single layer them and cook them as long as you can without burning them. I'm not to sure on how long it takes though.
