Becoming a domestic diva?

Well, once again missed wakign up at 6 am! I'll forgive myself, it is Sunday after all...woke up at 10.30 or so, got ready and went to the gym soon after. Pushed myself to do 40 mins. on the elliptical instead of the usual 30, and then did another 20 more on the bike (I was sweating well by then!). Total K burned= 455!

Came back upstairs, had my protein mix with 1/2 a banana, and then went to town cooking! First made a mushroom, spinach, artichoke feta/mozzarella fritatta. Then, lots of cutting, peeling, chopping, sauteeing, cleanign, etc. As a result, got more than 10 boxes of food prepared, and stored away in the freezer for the later days in the week. What'd I make? A large batch of my favorite lentil & spinach stew, a large batch of vegetable casserole, and a larg-ish batch of Quinoa & veggies stir fry (this was the weakest link of all, and I'm gonna have to consult the Quinoa Queen, Massiverally, for damage-control on this dish!).

As a result of all this 4-hour long cooking, I was able to a) return all the phone calls I had to make to friends and family, and b)stock up for the upcoming week, for those days I don't want to cook, and c) use up the veggies that were starting to go bad soon and/or those that won't fit in my fridge.

Had an early dinner--a combination sampler of all the above--and yes, the Quinoa was my least favorite :( What'd I do wrong??

Contents & points:
1) lentil & spinach stew: 1 cup lentils, spinach, garlic, onion, canned tomatoes, bay leaves, cilantro, red pepper flakes, curry powder, cumin (total pts=6, 6 servings)

2)Vegetable casserole: celery, mushrooms, brocolli, squash, zucchini, garlic, 1 can cream of mushroom (2), 1 cup skim milk(2), 2 servings croutons (2), 2 ounces part skim mozzarella (4) and 4 servings fatfree cheddar (4)(total pts= 14, 8 servings or so), parsley, cilantro

3) Quinoa & veggies stir fry: Garlic, ginger, Artichoke, mushrooms, zuchini, parsley, soy sauce/corn starch mix, 1/2 cup quinoa (points?)

Meals of the day:
Brunch (around 12.30 or so): Fritata with egg beaters (1), oil (1), reduced fat feta + part skim mozzarella (2), portabello, artichoke, spinach, garlic, parsley, basil, salt and pepper
Protein mix (2) with 1/2 cup skim milk (1), and 1/2 banana (1)

Dinner (qround 5.30 pm): Romaine salad with red pepper, sweet peppers, salad spritzer, few croutons (.5), and sprinkling of walnuts
small piece of the vegetable caserole (1.5), and 1 serving of quinoa/veggies stir fry (2?), 1/4 cup lentil stew (.5)

Walnuts/peanuts: 2 points

post-dinner snacking: 1/2 banana (1)
1 ww icecream (2)
few grapes and 1/2 ounce part skim mozzarella (3)
indian gram (chana): 1

Total points: 21.5

A couple of observations: Working out in the morning is what's makign me feel more energized,as opposed to yesterday, for example, when I kep putting off working out until the last thing in the day, it was making me feel tired and weighed down all day long. I have to remember this!
Also, my upper back is hurting today...don't know if that' coz of the weight-lifting from yesterday..but I do hope it recovers soon and does not get worse! I FEAR back aches!

Wow! You sound like a cooking machine! You will be all set for the week ahead now and are sure to be a fat burning machine with all that healthy eating and exercise. Keep up the fantastic effort!

Nice! Since you tend to number your comments...monkey see...1) Organization is the key and you, my friend, are well prepared for much healthy eating ahead. All your dishes sound delish!!!! 2) I’m soooooo honoured to be dubbed the Quinoa Queen! BTW, didja rinse it enough? I didn’t get all the bitter sap stuff off the first time, but fool me once...the second time I soaked it in hot water for way longer than the recommended 3 minutes and I strained and rinsed and changed the water several times. 3)Great workout!!! It is a turbo energy-booster!!! 4) You have totally go it together! 5) :-D

Now, that's a productive day - great work with getting all that cooking in, because that'll really keep you on track all week! GO TRAILBLAZERS!!!

I feel more energized when I workout in the morning too and find that I'm not as hungry! Great job getting all that cooking in.
