Not too good this week Mothers Day, Husbands birthday didn't help but will try harder this next week. Made some Apple cakes not sure of the calorie content but can't be bad as there are no eggs, no fat and lots of apple. They're different but once you get used to a different taste they are lovely. Someone may want to try them. I call them apple cakes as they are too solid to be a muffin.

2 cups of wholewheat flour (i used wholemeal spelt flour)
2 tsps. baking powder
1 tabsp cinnamon (ground) (you can adjust this amount)
1 and a 1/2 cups low fat milk or soy, oat, or almond
Apples (as many as you like I use about 5 or 6 med. ones but the more fruit the less flour you're eating and there isn't any oil or sugar so sweeter with more apples.
1/2 cup porridge oats
Heat oven to 180c
Mid all dry ingredients together then add the apple and milk mix well and because I use so many apples they stick out of the mix. Pile into greased muffin trays (i use spray olive oil) as cakes will stick as there is no fat or use greaseproof muffin cases for about 25 - 30 mins. stick something in to check they're cooked. I freeze them and take them out when I fancy something sweet. I reckon they can't be bad as there aren't any eggs, sugar, or fat, worth a try.Need to be frozen and can stick a bit to paper cases still working on that.
123.5 lb Lost so far: 0 lb.    Still to go: 8.8 lb.    Diet followed reasonably well.

Should be quite filling because you used wholemeal spelt flout, too! Cool recipe :)
