Early morning walk along the river today with the geese! Last night I made this gluten free, roasted pecan, pear, cranberry, cinnamon coffee cake for my daughter. It was too good!

I have never tasted goose, but since all these pretty birds have a mate, I'd feel terrible if one was "separated." One poor guy/gal was flying around alone and lonely calling and calling. 😢 I hope he/she found their mate. 😁 ❤️

Happyhl2, kittycat, mermee, thanks! It is an old recipe I modified. I was a normal coffee cake with apples. My girl who can't have gluten started making this cake for parties and potlucks when she was about 10, before her tummy troubles started. We all loved it! I decided to kick it up a notch with different fruit and nuts and change the flour. It is a favorite now again. ❤️

Mermee, my knee was hurting, but... I've got a new exercise and "limbering" plan I'm trying to see if I can reduce the pain. We will see. It was only about 5 miles and not very quick... A start! 😁

Thank you, liv, Diana, Nikina, and Ocean! It is a great place to walk! And... Having a nice cake just out of the oven when my girl came home from, being gone a few days was nice. She was really happy and gobbled up a few slices with me! 😁 ❤️ ❤️ ❤️ ❤️

D! Yes, they are so messy, but they do perform good fertilization for the fields! Haha! We have thousands and thousands that winter near that river, these few are the friendly, unafraid ones who venture near the trail. 😁 I also saw swans yesterday, which isn't as common here. They are massive! I actually thought some kid was out practicing his trumpet, and then I saw the white beauties flying overhead! Such racket!

Erquiaga, when we were in Heidelberg last summer we saw a huge flock of geese. Children were playing in among and feeding them, and they were all so amiable and sweet. My very Canadian hubby had to comment that they were so good natured compared to the Canada geese that we have. He always says that Canadians got rid of all their crankiness into their geese and that is why they are such calm and friendly folk! Just then we saw a little flock of Canada geese. They were chasing people and other geese.. Ad. Each other. It was a hilarious contrast! 😁

JoHannah's Coffee Cake! 3c glutin free flour, 2c sugar, 3 teaspoons baking powder, 1 teaspoon salt, 4 eggs (beaten), 1 c veg oil, 1/3 c orange juice (fresh is best)....... 2 teaspoons cinnamon, 5 tablespoons sugar....... 4 small pears (peel and slice) 1 cup dried cranberries, 1 cup (more is merrier) pecans (lightly roast) I mix up the batter and put half in the pan. Lay half the fruit and nuts on top and sprinkle with half the sugar and cinnamon mixture. Then repeat. I use an all purpose gluten free flour I have been getting from Costco. It is the best I have ever used. The brand is "Just About Foods." 1 hour and about 15 minutes 350 degrees in 9x13 inch pan. I have altered the original recipe so much, but I think it could be changed yet more. It was a bunt cake, thus the high level of oil. When using gluten free flour, it is much better in a shallow pan. Enjoy! It is a really heavy cake, but the flavor is fantastic!
