Zucchini waffle grilled cheese sandwich…I didn’t love it or hate it…followed base recipe. Maybe it would crisp a little more if I cooked it a minute longer? Add salami or pepperoni? 🤔

I would like to try that with tomato and califlower. I'm pulling out my retired waffle maker. Can you point me to the recipe? I would salt/sweat the zucchini longer to draw out some more liquid.

https://www.delish.com/cooking/recipe-ideas/recipes/a55808/zucchini-waffle-grilled-cheese-recipe/ I used this recipe… the corn starch may as well be flour as far as carbs go, 14g carbs just from the corn starch. Some alternate recipes use all purpose flour, I saw one with almond flour. I think there’s a good reason they dip it in cheddar broccoli soup in the recipe. Add flavor.

GM. Thx for sending the link. I've found 25% rice flour provides a lighter fluffier product. Will give it a go when the cooking stars align. It's a meal for the weekend. Cheers.

Just peeked at the recipe. I remember now cornstarch will not get crispy if there's alot of moisture coming to the party.

AC, I should never underestimate how much water is in a zucchini…I mean I squeezed the heck out of it, but perhaps I should have done even more! Also, I adapted for one zucchini so my egg may have been a bit much too. I’ll try it again in a couple weeks, I suppose.
