Sea scallops over brown rice with red and yellow bell peppers, onions, fresh ginger, carrots, Thai red curry paste, light coconut milk, chopped fresh basil and fresh juice and zest of a lime. Scallops could be seared a little better. I counted 480 kcal. A lot more carbs and fat than protein with no regrets.
