Wow. Can I come over to your house?!! I hope to not have Thanksgiving... I'd prefer to go out so I don't have left overs or temptations. but if not, I will have turkey and ham with fried green beans, fried yellow squash (if I can find some) and a sugar free cheesecake. I will probably also have cornbread dressing, a sweetpotato casserole, corn, a jello dish and a green bean casserole that are not at all low carb and will not be tasted by me. Your butternut and bacon soup and the pork rind stuffing sound very interesting. Where are the recipes?

Both the Butternut and Bacon Soup and the Pork Rind Stuffing are recipes I modified to fit my woe. I cook for 10+. Butternut Soup 8cups cubed/peeled butternut squash 2tbs olive oil 5cups chicken broth 1cup HWC 1 packet bacon or 12 slices 2tsp ginger 1tsp nutmeg salt and pepper to taste Preheat oven to 375. Combine squash, oil, seasonings in a small roast pan. Bake for 50-55 mins. Allow to cool completely. Cook bacon crisp. Place 1/4 of squash, bacon, and broth in blender. Blend until smooth almost paste like. Pour into a soup pot. Repeat twice more. Add in remaining 1/4 of squash, bacon and broth to soup pot. Add in HWC. Cook for 5-10 mins until heated throughout. Sprinkle each bowl with a little nutmeg or pumpkin pie spice. You can also do a cheesy version by adding in 8oz of shredded cheese when you add the HWC. Pork Rind Stuffing 1 bunch of celery chopped 1 large onion chopped 1 stick butter 1/2cup HWC 6oz chicken broth 5eggs 1 bag pork rinds or 2cups homemade crushed by hand or ground Italian seasonings In skillet melt butter and fry celery and onion on med to med-high until just turning a little crisp and black on edges. Beat eggs in a bowl. In a large bowl, combine all ingredients and mix well. If it doesn't look formed or is still a little to watery, add in some more crushed pork rinds. The mix should be gooey but thick. Spread onto a greased baking sheet. Cook at 400 for 20-25 mins until nicely browned.

Forgot to add on the PRS - I add in 2tbs hot sauce for half the recipe and cook it in two separate dishes as part of the family likes it spicy, part do not.

Oh my...super yummy...... (terrible cook over here) ....definitely trying the soup and stuffing ...for sure...
