Tomorrow's weigh in will be interesting. I averaged at or above 1600 calories this week and for the first time, one day at 2000 calories. On top of that, being sick prevented me from doing a lot of exercises I had been doing. Will be interesting to see how that influences the scale tomorrow. Not really upset about it...good spirits and physically doing much better.
Had "clean out the fridge" stir fry with cauliflower, green onion, cabbage, and bell pepper. Made sauce with low sodium soy sauce, fish sauce, toasted sesame oil, and red pepper flakes. Roomie liked it and made a request this week: stuffed bell peppers. Yesterday's cabbage rolls made him nostalgic too, and he's thinking of HIS mama's and grandmother's cooking.
Hey, I haven't had stuffed bell peppers in over 30 years, so I'm game. His family did not add cheese...my mama put cheddar in hers. We'll see how it goes!
Noticing that so many of us had a "Blah" week physically. Adding a special prayer intention tonight in our novena.
