Q. Does keto mean that I will be eating very small amount of carbs or not eating them at all?

A. Yes and no. Keto is the balance between fats-carbs-protein. Classic formula is 75-20-5%. The percentage can fluctuate slightly, providing you do not exceed 20 in the middle (that is protein).

Some dieters eliminate carbs to almost nothing, cutting down not only carbs, but also the fiber intake. It is impossible to survive without fiber, as it what makes our digestive system to work. Besides it feeds the microbiome - gut bacteria. Those are good guys who help us to keep ourselves healthy.

Ever heard of KETO RASH? More on that later. I was an unlucky one who got it and was fortunate that my doctor helped to figure out how to get rid of it. One of the theories (however unsupported) is that Candida bacteria, usually fed on sugar start rapidly dying releasing toxins that damage mucin barrier in our guts. With that, the toxins from the gut go into our bloodstream causing immune response. Microbiome actually produces the stuff that helps to protect mucin barrier. It is simplified description, not scientific article, but you can read this whitepaper that explains the link between gut bacteria and inflammatory disorders: https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4095778/

The food for those little creatures called "prebiotics". There are supplements available on the market, but me personally (being devoted to natural sources of macro and micro nutrients as much, as possible), I choose to derive those from vegetables. Also, vegetables are a nice source of micronutrients and vitamins.

You may be surprised to see what volume of green leafy vegetables fits into that 5% carbs margin!

I am food sensitive or allergic to many veggies and I can honestly say that I don't miss them as I don't like veggies. I have been fiber free for a while now and while I used to be constipated because I ate food that my system did not like and reacted to(veggies), I am no longer dealing with that. Many people find on the restricted carb system they feel better than they have before and it is a great tool to find those offending items that were harming your well being and health. I test foods regularly to see what I can add in to my long term life plan. right now it is meat and meat fat. blueberries being tested this week

What do you take as a fiber substitute? I found out that xhantan gum is a great thing as a base for many sauces and gravy.

the point is that I wanted to point out is those are general guidelines and each person needs to find what percentage of macro's work best for their goal. some find they need 80% fat some need less, all these macro's are adjustable. people who work out may need more protein then the general 20%.

I am betting I am a lot older than you too. and I am rebuilding my health along with my muscle tone. I used to exercise a lot more but found I was overdoing it and damaged myself. too much cardio and not enough calories. so I focus more on weight type training rebuilding my muscles and do limited cardio. I am basically carnivore now and maybe one day I will be able to have a few additions. so far I am liking the blueberries I always have enjoyed those. good source of vitamin K and some vitamin C.

I have to agree with Baskington. Everyone is different and has different health issues created by years of hidden intolerance's. I have gone primarily very low carb/mostly carnivore/high fat. I feel much better having eliminated plant products. There are no carbs that are necessary. Fat and protein are necessary to live. Maybe some day after healing my body, I will be able to add limited plant products, but for now, I'm satisfied eating as I am.

I have to make a disclaimer (maybe should put it in my post too) - all I write is based on my personal experience, scientific findings I am aware of (will try to provide whitepapers as a supportive evidence) , common sense and my gastroenterologist's approval :-))... It may not fit into each person's picture of the universe, so you are welcome to disregard all of it. But I hope for some it would be helpful.

it helps when you clarify this is what you follow, that disclaimer. sometimes a post can come off as a lecture of how to do instead of the intent of sharing what is working for you and why. I try but sometimes forget to explain myself too. avoiding plants and fruits can be a hot topic around here LOL! But I can not eat foods that make me sick.

well, everything written in the internet is somebody's personal opinion, unless it is the government announcing that they increase taxes starting tomorrow or something like that...lol... I do not mind the criticism, if it is constructive and supported by some sort of science or common sense. Even if it is just "my way or highway, because I said so"...LOL... that is okay too...no need to debate...Pick your battles where they really matter...
