Amaranth and tofu. I mixed chopped onions, celery, and mini sweet peppers in the amaranth. I baked the tofu and added Trader Joe's Korean Style BBQ Sauce on it for some flavor.

Looks good Kevin...I also learned something new as I did Google amaranth and found its health benefits compared to rice and other cereals...Nice!!

Amaranth is very similar to quinoa and millet. It does taste a little different than quinoa though. I often go to a grocery chain called Sprouts where they have all sorts of interesting grains (and faux grains) in the bulk section.
