Finally got my breakfast .. face palm.. my eggs got done just in time to go to the movies, so I tossed them in the garage (yeah 13°F they were fine lol) I habe eggs for the week too Yay!!

Liberally spray a 9x13 pan with baking spray. Mix 24 eggs, 1/2 heavy whipping cream, 4tbsp butter(melted), salt and pepper (6could also add a little dry mustard too) to taste stir til well combined. Sprinkle 1/4cup each of onions and peppers over bottom of pan. Pour in mixture and sprinkle in 1 1/2 cup cheese ( could also add a meat such as Ham..such as adding some mustard Swiss cheese and Ham omg good) I baked this one for 25 minutes on 300 and then 8 on 400, but before have done 20-25 on 400

I do similar - I bake eggs with cheese, cream, spinach and meats in muffin tins - 325 degrees, about 45 minutes. After cooling, I wrap them in plastic then reheat in the microwave.

Gz9gjg- I do have some jumbo muffin tins I could try that.. I have to consume larger amounts as I am still a bigger person.. Although usually don't hit my calories

Hi Michelle, my version ends up using about 1 1/2 eggs, 1/4 cup Gruyere cheese, and 2 tsp heavy cream per "jumbo" muffin tin. You could use less veggies than I do, if you need more egg or cheese. But don't fill the tins past 2/3 before baking, because the mixture will swell as it cooks.
