This has been a very fishy week for me; literally. :-0 It was done, on purpose, in hopes of seeing my weight drop, on Monday, when I get on the scale. It's actually been a very tasty trip through the fish market, as I've had swai, tilapia, and my favorite, salmon, which I'll probably be having two different ways today, honey smoked, very delicious, and a canned atlantic salmon, in a dish similar to what my grand mother use to make when I was growing up. It features the salmon, supported by chopped tomatoes, sweet onions and sweet peppers; served over a mixture of low carb spaghetti and zucchini. I'm making myself hungry, just thinking about it. :-) Have a great day everyone. :-)

Oh how I wish I liked fish..but the only thing I like is boiled shrimp and crab legs..More power to you as you like it..Hope the scales are good to you come Monday..Have great weekend buddy...:O)

Mmmm.. sounds yummy!! My bf and I made fish on the grill last night (aluminum foil pouches) fresh sunnies and crappies caught from a local lake, a little butter, mushrooms, spices - grilled on a charcoal grill - delicious. Hope you get the weight drop that you're looking for on Monday!!

LOL As much as I love fish, and the dish I wanted to put my own spin on; it will have to wait until tomorrow. A low carb pizza is much easier to make, after a long day of work, and is calling my name tonight. :-)

Thanks. Yum is right! :-) It was a tasty week, and the salmon was the best; lightly seasoned and pan grilled, with just a splash of lemon juice to enhance it during service. Though I live in the mid west, where fresh fish is available, I usually get mine from Costco or a major supermarket, where it's been previously frozen. However, I do make sure I get the best quality fish available to me. :-) If it were possible, I'd welcome a visit from you. LOL In the meantime, you have a great weekend too.:-)

You're making me hungry too :). I love fish. We usually get ours at Costco too. BTW, have you tried their rotissery chicken salad? Gosh, it's good, hardly any mayo, just chicken and celery and such. Have a good weekend :)
