Happy Saturday,

I managed to get up at 4:30am, as planned, so will have grocery shopping out of the way early.

I'm going to focus on eating whole foods this week, and continue eliminating processed sugar from my diet. I still need to find a good tofu recipe...it's the one vegan food I haven't been able to cook with.

Our organic seeds for Fall planting arrived yesterday, so I'm in a gardening mood today :)

Hat off to you!! At 4:30am I am fast asleep!! I cannot ccok tofu, but love it when someone can cook it!!

I get up at 4am during the week, so I guess I'm just used to it :) I have loved tofu when someone else cooked it, but it's been horrible the few times I've tried, lol

The only way I can eat tofu is to pan fry it. What tofu have you tried using? I usually buy the firm tofu only. You can try this recipe; it's one of my favs: http://www.ilovevegan.com/almond-crusted-tofu

I've tried pan frying extra firm tofu. I think it must be my seasonings that aren't right. Thanks for the link!

I'm new to tofu, but trying to eat less meat...animal lover! I just crumble in omlet with any veggies ect. Also add to smoothies. Try a Japanese cookbook for recipes. I've always heavily spiced my dishes, so no problem there.

@VJ.......you have to get the seasoning right. If you don't it won't be great to eat.

I don't prepare tofu that much because of the issues you just mentioned. :(

I decided not to make it tonight, but I have sautéed fennel and garlic for the mashed potatoes. I've got salmon filet in the grill for hubby

Never put the garlic in with the fennel and mashed potatoes. My hubby doesn't like garlic, but hey.....he can eat it once in a while.
