1 week back to 40 or less carbs a day... and 3 pounds down. Need I much more proof that I am gluten and carbohydrate sensitive? I feel better already... but I freaking love my baking! This will never be easy!

Wheat is known to be physically addicting too. Like you, I feel much better if I do not eat it especially, other carbs seem far less problematical. Unless we're talking Lay's Potato Chips.

There's some really good cookbooks out there that can help with the baking part. If you can't afford to buy, you could prolly check out your local library to see if they have them.
