I made chicken & sausage gumbo this evening, so good. No picture, I just dove right in. Maybe tomorrow, there's lots of leftovers.

It's good to cook ahead, isn't it? Today I cooked (long and slow) a tri-tip roast in a lot of mushroom sauce. It was so easy with 2 cans of Cream of Mushroom soup, an envelope of dried Lipton Onion Soup mix, wine, a whole bag of fresh mushrooms, and some extra water. I had never cooked it in sauce on the top of the stove before, instead of in the oven. I have one burner that will go really low. But I'd put in extra water so as not to burn it so had to put in some flour mixture at the end. It was great. I'll freeze some leftovers and maybe leave a portion for dinner in 2 or 3 days.

Sounds delicious Snow. Som things are difficult to cook in one-serving portions, like roasts and gumbo, but it's great to have prepared meals in the freezer.
