We had creole red beans and sausage tonight and I still stayed in my carb range. It was so good. I fixed rice for my husband but figured those carbs weren't good for me. No vits, etc. It was good to have a few beans, if only 1/2 cup.

Oh yummy! It never occurred to me that I could make red beans and rice without the rice! That sounds silly, haha. Anyways, I am definitely putting that on the menu next week! I wonder how it would work with cauliflower rice as pp suggested. I might try that as well.

Never heard of cauliflower rice. Wouldn't it just taste like cauliflower? Of course I like cauliflower, just don't know how to make it. Guess I need to check it out. Thanks for suggesting it. :)

It's grated cauliflower. I like to saute it in a bit of olive oil, but you can also steam it. It it has a similar texture to rice, and in many cases is an acceptable substitute.

I get frozen cauliflower. Then put it in oven to dry it out a bit, then stick it in food processor. It takes on any flavor you put in it.
