Sending Franklin Nut cake away today. I entered the recipe into my FS Cookbook, and one SIXTEENTH of the cake is 630 calories! Yikes! Good thing I resisted! It has four sticks of butter, 2 cups of sugar, 4 cups of pecans, 6 eggs, an 8-oz container of candied cherries, an 8-oz container of candied pineapple, plus 4 cups of flour, baking soda, almond extract, and vanilla extract. Maybe I'll work in ONE slice at Christmas time.

Yup, a whole pound! The cake itself is very heavy. Because it is so dense, you can cut slices quite think if you have a mind to. My husband's mother called from her vacation yesterday afternoon and told us how thrilled everyone was to get the Franklin Nut Cake. From start to finish, it takes over 8 hours to make, so they knew it was a labor of love. I'm going to vow to not make another one until Christmas. I'll have to try my cutting skills to see if I can get a slice down to 1/32nd of the cake (315 calories). That's doable for me.
