Two bites into my peanut butter toast, I realized it needed...something... Farmers market cucumber kimchi to the rescue! :D

If I were at someone's house and they put one on my plate, I'd eat it out of politeness. I don't think a little meat here and there is gonna hurt me, and if someone's sweet and generous enough to feed me, I'll be gracious enough to eat. Just not my thing. Nor is it really my husband's thing, lest someone think I have a poor, suffering man in the house who's staring at his plate of veggies wishing there was a steak in the middle of it 😜 He actually really enjoys how we eat these days

I'm a former vegetarian and I agree that you do eat a very interesting diet. Peanut butter and pickles. Maybe if I had been less picky the diet would have worked for me except for the vitamin deficiencies which could not be ignored.

Peanut butter and kimchi is a great flavor combo! I thought I was the only weird one that liked it though!😂

Yep, Morticia, it is a concern and something I really researched before I went down this path. I try to eat fish once a week, and the occasional egg. I supplement with B-12 (non-negotiable if you're not eating much in the way of animal products), eat fortified foods, and watch my protein levels. Not everyone is that careful, or wants to be. I've seen too many vegan advocates gloss over potential deficiencies, when it's not to be taken lightly. Vegan (or close to) does not necessarily equal healthy. Glad you've found something that works for you 👍😊

karen -- I've always liked peanut butter with salty/sour, even as a kid. My favorite childhood sandwich was PB, tomato, pickle and lettuce on slightly burnt rye toast 🤣 TBH, I'm a little grossed out sometimes by PB + sweet. I remember getting sick to my stomach after a PB and either apple or banana (can't recall which) sandwich, and it kind of stuck with me 🤢

Do you like sauerkraut, buenitabishop? Kimchi is kind of like a spicy sauerkraut. Really good stuff
