I wish the amounts gained / lost were in similar proportions. Eat well and exercise for days for a small loss, relax for one day and gain a lot 🤷♀️

Most of it is water weight

When you exercise your body holds onto water so that if you don't exercise often you will definitely weigh more the day after a random workout.
Have you tried weighing yourself daily and tracking that data on a spreadsheet? I do that and take the average for the week. So many things influence our daily weight. I weight appropriately 500g more the day after a pasta dinner and then the day thereafter back to "normal". Just an example.
