Why do so many healthy salad recipes call for tomatoes or cucumbers? Or avo? I have sensory issues with the squidgy texture of them (mushrooms too), which can make throwing together a quick guilt-free salad for lunch incredibly challenging.

Anyone got some great alternatives? I’m not really a “salad-y” person, but I’m trying.

Holy shit, I thought I was the only one. I've also got some serious sensory issues with regards to certain textures. Tomatoes are disgusting, I literally gag every time I attempt to eat them. I like the taste of avocado, but the texture is repulsive. Despite being vegetarian, I'm not exactly a "salad-y" type of person either, however if I were you, I'd just cook up the vegetables I DO like, toss them together and boom, there's your salad. There's no need for the inclusion of vegetables you don't like.

think. colourful. crunchy. Herby. spicy and soft. baby spinach. radishes. peppers. spring onions. corn. chick peas. herbs. yogurt dressings. ginger. carrots. purple and white cabbage. sprouts. all wonderful things that make lots of different types of salad.

What about a frittata or crustless quiche? You could put in diced spinach or a butternut and feta one. I make a big one on Monday and cut it up for the week :)

Also stir fries or a big curry/stew for the week can work.

Steamed Broccoli and cauliflower add some sweetcorn & feta cheese then dress it with your own home made dressing..

Do what I do and just go with veg instead. Woolies had a broccoli, carrot, snap peas and green beans mix. It’s my life saver recently. Microwave for a minute and air fry for 5. Nice and crunchy

peppadews are a nice tomato alternative in salads! I also sometimes have a sensory issue with raw tomatoes that I don't feel like fighting 😅 Also I don't adore the texture of iceberg lettuce - but I do prefer the more nutritious dark leafy greens. You can still make a salad with substitutions of what you do enjoy eating 😀

I often replace my tomato with apple slices

Try adding corn, broccoli, carrots, peppers or other veggies that do not have that texture

I also hate avo and mushrooms - yucky that texture BLEH :) I just use lettuce, spinach, cabbage, peppers,. herbs (coriander, mint, chives and anything else edible in my greenhouse), use sprouts, pumpkin / linseed or other seeds, fresh baby corn, fresh peas, broccoli etc. I also braise green beans in garlic and wait for them to cool down before adding. You can also add strawberries. You don't need tomatoes or cucumbers in a salad :)
