So, been experimenting and looking for dessert recipes that we can enjoy. CUSTARD ! Wouldn't have thought it. Regular custard has about 30 GRAMS of carbs per 1/2 cup serving. I modified a recipe I found in my nana's old cookbook from the 50's ! This recipe is approximately 8 carbs per 1/2 cup serving ! My hubby and I were really surprised how well it turned out.

Baked Custard

4 eggs
1/2 cup sugar substitute
1/2 tsp. salt
1/2 tsp. Vanilla (I like to use more.)
1 1/4 cups water
1 1/4 cups heavy whipping cream
Nutmeg (optional)

Beat eggs slightly with a fork. Add sugar substitute, salt and vanilla. Add cold cream and water; stir until thoroughly mixed.

Pour into custard cups; sprinkle with nutmeg if desired and place in pan 2-2 1/2 inches deep. Pour boiling water around cups to come almost to level of custard.

Bake in moderate oven (350* F.) 40 to 50 minutes or until a knife comes out clean when inserted in the center. Remove from water to cool. Chill and serve in cups. The flavor is better when it chills overnight. You can also bake it as one large custard using a quart size dish in water as directed for about 1 hour. (In my oven I baked it for 70 minutes !)
