Day #3 of food change.
Some have asked me for the details on powdered peanut butter. The product I bought is called "PB2", a product of Bell Plantation in Tifton, GA. It comes in a 6.5 oz. plastic jar, "no additives," "all natural," and kosher as well. It was in the grocery store right with all the other peanut butters. But, with its packaging and colors, I could see it being sold with other specialty foods, too.
Nutrition info: Serving size 2 Tblsp (pretty much like regular peanut butter), 45 calories per serving (13 from fat). Total carbs = 5, fiber = 2, so net carbs is 3 per serving. Although they say "no additives" on the jar, the ingredients are roasted peanuts, SUGAR, and SALT. There's 1 g of added sugar per serving, which is not ideal, but still worth a try IMO.
They suggest mixing 2 Tblsp of PB2 with 1 Tblsp of water, stirring until smooth. I guess that would be if you wanted to use it as a spread.
I haven't mixed it in a smoothie as yet, but did try some as is and it has a very nice peanutty flavor. DH took a big mouthful and nearly stuck his mouth closed!!!! So....if you sample it that way, don't say you weren't warned!!
