I don't think I had as much wine as I recorded last night, but I had company, so I lost track. I was in bed by 9 PM, but it was really 10 PM because of daylight savings.

At any rate, I ended up thinning my salad dressing with 2 T fruit juice from the can of Mandarin oranges. It was just OK. I did not like the combo of fruit and red onion. Maybe use the white parts of green onions next time. Or maybe skip the onions and use some kind of nuts. And thin the dressing with something else. More balsamic? Water? Testing continues.......
