It's been about 12 days since my original entry. I have been eating right, and exercising about 70% of what I need to be doing. Even though my friends and I had a huge Halloween party last Friday, I didn't over eat, and I had a 5k with my 8 year old son the Saturday after the party. Sooooo needless to say I feel pretty good about how I dealt with my first holiday temptations!! Ohhh btw I actually came in 3rd place for my age division in the 5k!! LOL There must not have been too many old ladies running it! HAHA!
I've been creating some AMAZING meals!!! I love to cook and am keeping with my plan and substituting ingredients' that are not healthy. Tonight I made eggplant parmesan and instead of the regular breading I substituted quinoa that was leftover in the fridge, and lightly "toasted" in in a little olive oil to make it crunchy! I dipped the eggplant slices in "eggbeaters" and then in the toasted quinoa that included garlic and Italian seasoning. Then I baked it for about 35 minutes at 350. When it came out it had a great texture. Then I threw some spaghetti sauce on top and sprinkled a light amount of parmesan cheese on top. It was fabulous!!! two servings was about 200 calories! Yummy too!
Anyway I hope I can stay motivated by trying new foods, and also enjoy what's left of decent weather before the snow hits!!!
