Grilled eggplant for lunch today!

Cut baby long eggplants in two, sprinkle a little salt and pop it into the oven at the topmost tray. Bake for about 30 - 40 minutes. And voila :)

Chia and Mackerel Salad for breakfast!

2 slices mackerel washed in tumeric. Coat fish with a dash of coconut oil (1/2 tbsp), grill on a non-stick pan - sprinkle garlic powder, salt and pepper on each side. Throw in a few tiny sprigs of fresh rosemary, thyme and oregano (all or whichever available). Grill fish until its flaky white.

Place fish on a bed of romaine lettuce and sprinkle a tablespoon of chia seeds.

Both breakfast and lunch = 487 calories and super delish :)
