LOADED BAKED “POTATOES” – Well, Almost!
Ingredients:
Frozen Cauliflower – TWO 16-ounce packages
Cream Cheese - 8 ounces, softened
Cheddar Cheese - 8 ounces, shredded
Green Onions - 4, chopped, head to toe
Chives – 1 Tablespoon, chopped
Salt - 1/4 teaspoon or to taste
Pepper - 1/4 teaspoon
Bacon - 6 slices, fried until crisp and then chopped
Instructions:
• Grease an 8” x 8" baking pan or a 2-quart casserole. Preheat oven to 325 degrees Fahrenheit. Soften Cream Cheese.
• Cook the cauliflower until soft, about 8-10 minutes.
• Drain very well and break up the florets a bit with a spoon. (It's also very good if you leave the cauliflower a little chunky.)
• Cook pre-cooked Bacon in microwave approximately 1 minute 25 seconds (until crisp). (YES, I cook my pre-cooked Bacon) Drain. Chop Bacon into coarse pieces.
• In separate bowl, with electric mixer, blend the softened Cream Cheese, Cheddar Cheese, chopped Green Onion, Salt, Pepper, chopped Chives and chopped crisp Bacon.
• Gently stir in the Cauliflower
• Bake at 350º for 20-40 minutes, until browned and bubbly.
