Made MY VERSION (read: experiment) of eggplant parmesan from a ginormeous eggplant I got from school. So excited to eat this for lunch this week!

Diet Calendar Entries for 29 June 2020:
1654 kcal Fat: 78.82g | Prot: 77.81g | Carb: 165.05g.   Breakfast: Tamachan Shop Shiawase Seeds, Blue Diamond Almond Breeze Unsweetened Vanilla Milk, Tamachan Shop Tanpaku Otome (Chai Flavored Protein), Quaker Old Fashioned Oats. Lunch:  Chicken Sausage,  Okra ,  Green Peppers ,  Chicken Broth (Home Recipe),  Quinoa (Cooked). Dinner:  Eggplant Parmesan Casserole,  Egg Omelet or Scrambled Egg with Cheese. Snacks/Other: Luv Yu Japanese Rice Crackers, Co-Op Vanilla Waffer Cookie (iron and calcium supplement),  Peanuts,  Oatmeal Cookie with Chocolate Chips, Tamachan Shop Shiawase Mixed Nuts (no salt or oil added). more...
