Ah, Plan B!
I started out making chili rellenos but ended up with a slightly different dish, mainly chicken chili rellenos casserole! After I got the anaheim peppers charred, they seemed too cooked and limp, so stripped off the skins, cleaned them out and cut them into half strips so...........
Opened a can of enchilada sauce and layered sauce, pepper strips, leftover rice, leftover rotisserie chicken, leftover corn off a cob, white cheese, another layer of pepper, and topped it with a corn tortilla and topped off with more sauce! Will heat up and serve for dinner. Along with a salad, I think it will be good. Afterall, smother your foods with enough cheese and it's all good! LOL
