So I made a piece of bread this morning with coconut flour and was able to slice it and have a hamburger. I am stuffed! I do not think there will be much, if anything, to lunch. The bread was a little bland...next time I will add some minced onion or maybe garlic and parsley or basil...but it was filling and great.
I am happy that my weight is back down so now I will see if the coconut flour is going to have an adverse effect on it.

I made bread with ground almonds, and I have to eat very little of it to keep from gaining weight. It doesn't give me that awful bloated feeling that i get from wheat flour, so that is good. Sometimes you just want some bread. Nice going on the weight loss! You are at your lowest now, right?

Thank goodness bread is one of the things I can pass on & don't miss... mainly because I don't/don't like to cook or bake. But I have become an expert on purchased healthy products & do like & occasionally have Ezekiel bread. Happy for you, Jaime, and the weight being down -- thats a major accomplishment this time of year!
