HAPPY Monday and Happy OCtober -- very fall like temps this morning! Would have loved to have another day of weekend but it is better to be back to work and more disaplined eating.
I did make a super yummy dessert this weekend. SF Vanilla pudding made with 1-1/2 c unsweetened almond milk, 1/2 c heavy cream, 1/2 c canned pumpkin, a squirt of liquid stevia and 1 tsp pumpkin pie spice. Makes 4 servings and OMG - so very yummy and only 7 net carbs (if you use a zero net carb almond milk). I'll be making this again - SOON :)
