Some good low carb veggies that can be cooked so they are easier to chew include spinach, spaghetti squash (great substitute for pasta), green beans, broccoli, cauliflower, zucchini. Cucumber is pretty soft too. Make sure you always have cooked protein on hand ...the protein really makes you feel sated and stops cravings.
I just tried Dreamfield's pasta yesterday and it is fantastic. It boasts that it only has 5 digestible carbs per serving. It certainly was filling too.
