Thankfulness Journal, day 2:

I'm thankful that my weight continues to go down, though I won't be recording by how much, until my regular weigh in day, which is next Monday. :-)

Diet Calendar Entry for 08 August 2012:
1770 kcal Fat: 122.09g | Prot: 115.61g | Carb: 31.34g.   Breakfast: duck fat, honey mustard, unsalted butter, sharp cheddar cheese, kroger, corned beef, Apriva zero calorie sweetener, green tea, salada, large eggs, kroger; scrambled in butter with cheese. Lunch: Dark Chocolate Mocha Smoothie, Spicy Low Carb Lasagna. Dinner: Apriva zero calorie sweetener, tea iced, sweet onions, sweet onion dressing, walden farms, Pork Shoulder Steak, pan grilled w/ sweet onions , Green Beans in Duck fat. Snacks/Other: Dark Chocolate Mocha Smoothie. more...

So glad that your weight is going down. Even when you enjoy your food a little too much, always come back here and get going again. that what I love about you my friend. :) You never give up!

Thanks gigi. You're right, sometimes I do enjoy my food a little too much, but I come by it honestly; I come from a family of food lovers, who love to cook, and if I can make my favorites into delicious low carb versions, then I'll continue to eat well, and lose the weight while doing it. You're right; I'll never give up, because I never want to weigh more than 300 pounds again; and after I get to Onederland, I never want to weigh more than 200 pounds again! :-)

Duck fat? I am curious as to why you use it. It sort of makes me queasy. Good news about the weight loss!

Thanks. About the duck fat. I roasted a duck a few months ago, and saved the fat for cooking purposes. I guess I use it for the same reason I use bacon fat; the added flavor it gives, is just appealing to me. My usual cooking mediums, olive oil, butter, bacon fat, and coconut oil are good, but this just changes it up a bit; I also have some goose fat in the fridge, which I use on occasion. :-)

Goose fat, used to love to cook with it or spread some on dark bread with a little salt. Have not roasted a goose in ages though.

Right back at ya, Yvonne! :-) You were the first one to welcome me to fatsecret, a year ago, and I was so inspired by your weightloss history,that I just knew, I could do it too. Though my journey is far from over, I know that eventually I'll get to where I'm going, and I'll have you, and my other FS buddies to thank, for helping me get there. Continue to be blessed in your weightloss efforts. :-)
