Hmm. Up 4/10 of a pound this morning and not backed up. Don't know what's up with that. I did have an extra slice of my DKB Good Seed toast with butter last night, but was still below my 2,000 RDI at 1,816. Guess I can't toe the line like that.
Still getting in my fruits and veggies, drinking water, limiting Diet Coke, getting in my fiber. Already started planning next week's menu to reduce calories back down in the 1,400's and 1,500's.
Today, I made a Taco Casserole to have for lunch. 1/8th of a 9"x13" casserole dish is only 280 calories, but I will be topping it with sour cream (mixed with a packet of taco seasoning) and diced Roma tomatoes and a couple of crushed up tortilla chips for a total meal of 445. Hope it's good. I adapted my Chinese Casserole recipe to come up with this concoction.
Knee was hurting so badly yesterday that I had to take a pain pill twice. Bummer! I hadn't even had to put Diclofenac cream on it this whole time I've been dieting (on week #8 now). Still hurts today, but not enough to have to do anything about it.
Pool is STILL green, after shocking it every day for at least a week. Don't know if we might need to "just" drain it and start all over. It's a 10,000 gallon pool, so it's not an easy task. My husband has been faithfully checking the chemicals and adjusting them every day. Feels like we're fighting a losing battle, but he doesn't want to "waste" all that we've already put in it trying to get it stabilized. Wish he had found this replacement hose sooner, so we wouldn't have had to leave it sitting dormant for over a month without the pump on!
