Freaking AMAZING salad!!!
Got the recipe from nomnompaleo.com So easy. Need a peach, proscuitto, greens like arugula that are a bit bitter, olive oil, and balsamic vinegar.
Cut the peach in half. Pit it. Then cut the halves into thirds. Wrap each peach piece in a slice of proscuitto. (Mine were wide strips, so I cut them in half lengthwise first). Heat up a skillet over medium high heat. Lay the peaches in the pan on their side. Leave for about a minute. Turn to the other side. Sear that side for about a minute. Then turn on the back (skin side) and sear it.
Place the peaches on top of the greens. Drizzle with balsamic and olive. Prepare to have your mind blown!
DH was out tonight, so this was dinner, along with some macadamia nuts, and broth. Awesome. Oh, and strawberries. Just what I needed.
