Chicken Tikka Marsala - with Portuguese Linguisa

Keto doesn't have to be bacon and eggs until you see them in your sleep.. But some things look scary until you look at the numbers..
This recipe I cook once in a while... and tonight was the night.. I usually make a lot ..and the recipe is for 4 servings... I have one for dinner and freeze the other 3.. for nights when I don feel like cooking.. It microwaves well after freezing too.. So, when you look at the numbers... divide by 4..to get accurate numbers for the one serving...

It is based on Traditional Indian Tikka Marsala Chicken... however, I give it a keto twist to jack up the fat count..

Ingredients:

1/3 white onion - diced big
1/2 Green Bell pepper - diced big
3 cloves of garlic sliced lenthwise
3 medium sized mushrooms - sliced
1 14 ounce can of diced tomatoes
1 14 ounce jar of Sharwoods Tikka Marsala Sauce
10 ounces of 1 inch diced chicken breast ( I use Organic Smart Chicken in this recipe)
4 ounces of Portuguese linguisa - slice in 1/2 inch slices

1. Ok, saute the onions, garlic and bellpepper until they begin to get soft - then reserve
2. Saute the mushrooms in butter - reserve
3. brown and saute the diced chicken in butter and either olive oil or garlic stir fry oil
4. Microwave the linguisa for 55 seconds and reserve

5. Add the can of diced tomatoes with juice to a medium to large skillet then add 1/2 the jar of Tikka Sauce
6. add the onions, garlic, bellpepper and mushrooms to the sauce and stir.
7. Turn the heat up to 3/4 high and add the diced chicken..stir in the rest of the Tikka sauce.. I also put about 1/4th cup of unsweetened Almond breeze in the jar and hake it up to get all the sauce out.
8. Cover and bring to a boil - then lower the heat to about 1/3 of maximum - and cook for about 10 minutes - then cut the heat in half for another 10 minutes...
9. when the 20 minutes is up - add the linguisa slices.. and bring back to a boil.. then immediately turn to simmer and cover for 10 more minutes... Enjoy..

I serve it with boiled string beans...

SO now the scary numbers:

Calories :1281 - carbs: 70 - fat: 59 - protein : 119
but remember to divide by 4 because this is four servings..
So the totals for dinner:

Calories: 320 carbs: 17.5 fat: 14.75 protein: 29.75

Keto doesn't have to be repetitive or boring...

What motivates people to go on this sort of quest.. I suspect there are as many reasons as there are people but there is always one thing that pushes one over the edge... I know what it was for me..
I stayed fit my entire life and trained others to get fit for 29 years as stated in the profile.. however , when I was 52 i was severely injured in a gasoline tanker accident.. These injuries left me so debilitated that it seemed there was no road back.. and as time passed, I looked in the mirror and wondered how it came to this ?
Like most, this left me depressed without a road back to myself..well..
I decided to get out of my comfort zone (although it brought me little comfort) and revisited Vietnam. I left the states at 228 pounds...
While there I visited the Ky Niem Den Hung temple complex in Viet Tri about 90 km North of Hanoi.. For the people of Vietnam this is a sort of sacred pilgrimage up the side of a tall mountain with thousands of steps to get to the top.. There are 3 levels and at each level is a different Buddhist Pagoda ...each of which has a different significance.. and the name of the game is to reach all 3.. When I reached the first Pagoda.. I was spent, simply exhausted.. but I was determined to make it all the way to the top or die trying... Yes, I made it to the top.. and it was on the way back down that I decided it was past time to find my way back to who I am.. That was 15 months ago... and when I returned, at first I did nothing.... but that mental conversation on the way down Den Hung.. kept ringing in my head...
So, how to start, how to set a challenging goal ?
SO, I decided to get below the weight I was when I graduated High School.. I graduated in 1973 and at that time... I weighed 173... but I decided to take it a step further and go down to 170.. to give me a cushion for those times when you just plain eat too much....
Well, here we are 15 months later @ 173.6
